    1. In a saucepan of water, cook the sweet potatoes until tender, over a medium heat. Once cooked, drain the sweet potatoes and allow to cool.
    2. Melt the butter in a frying pan over a medium heat and cook the bacon to your liking. Remove the bacon and set aside.
    3. Add the sweet potatoes to the bacon fat (adding more fat if required) and sauté until they start to brown.
    4. In a bowl, beat the eggs and season to taste.
    5. Pour the egg mixture into the frying pan, mixing through the bacon and sweet potatoes.
    6. Allow the mixture to set and cook until it starts to brown on one side. Use a plate to turn the omelette and cook the other side.
    7. The omelette can be served warm, or kept in the fridge for a later breakfast.
