    1. Over a medium heat, melt the butter in a frying pan and add the mushrooms. Once the mushrooms become tender remove and set aside.
    2. In a bowl, beat the egg yolks. In a separate bowl, beat the egg whites until soft peaks appear. Fold the yolk mixture into the egg white mixture.
    3. Add the egg mixture to the frying pan over a medium heat and add the crab and mushrooms evenly.
    4. Allow the mixture to set and cook until it starts to brown on one side. Use a plate to turn the omelette and cook the other side.
    5. The omelette can be served warm, or kept in the fridge for a later breakfast.
