    1. Hard-boil the eggs in a pan of cold water, bringing it to the boil and simmering for seven minutes.
    2. Drain the eggs and cool in cold water, before shelling them. Roughly chop the eggs and mix with the mayonnaise. Season to taste.
    3. Spread the egg mayonnaise over the bottom half of the nori wraps and add the spinach and tomatoes.
    4. Roll the wraps starting with the filled half. Secure with water to seal the end.
    5. Cut in half and serve, or store in the fridge and enjoy tomorrow morning.
