    Instructions
    1. Preheat the oven to 350°F.
    2. Whisk the eggs in a large bowl.
    3. Add all of the ingredients, except the eggs, to the food processor and blend.
    4. Mix in the whisked eggs thoroughly, and pour into muffin cases.
    5. Cook in the preheated oven for 20 minutes, ensuring the mixture is thoroughly cooked in the centre.
    6. Allow to cool, and serve with guacamole or salsa.
