    1. Preheat the oven to 180°C (350°F).
    2. In an ovenproof frying pan, melt the butter over a medium heat. Stir in the olive oil and asparagus. Cook the asparagus for approximately ten minutes, until the asparagus becomes tender.
    3. Stir in the mushrooms and cook for another five minutes.
    4. In a bowl, beat the eggs, water and thyme. Add this egg mixture to the pan, reduce the heat to low and cover and cook for a further 5 minutes.
    5. Transfer the pan to the oven and bake for 10 to 15 minutes until set.
    6. If you tolerate dairy, top the mixture with the cheese and grill (broil) until the cheese starts to brown.
    7. Once cooked, slice and serve warm; or store in the fridge to enjoy cold later.
