    1. Score the tomatoes with a knife and blanche in boiling water for 60 seconds.
    2. Remove the tomatoes and allow to cool, before removing the skins.
    3. Remove the seeds and chop the tomatoes finely.
    4. Chop the bell peppers and sauté in the oil in a pan over a medium heat. Once soft, add the tomatoes to the pan and cover. Allow to simmer until the mixture has softened.
    5. Remove the lid and reduce the mixture allowing excess water to evaporate.
    6. Season and add the chili.
    7. Beat the eggs and add to the pan, stirring into the mixture. Cook until the eggs solidifies, then serve.
