    1. In a pan, heat the oil over a medium heat. Add the onions, capsicum (bell pepper) and garlic. Stir and allow to cook until the vegetables start to become soft.
    2. In a bowl, mix the tomatoes, cumin, paprika, salt and chili. Pour this mixture into the pan and mix thoroughly.
    3. Allow the mixture to simmer to allow some of the liquid to evaporate.
    4. Once the mixture is drier, make four indents in the tomato mixture.
    5. Crack an egg in each indent, cover the pan and allow the eggs to cook for a further five minutes.
    6. Serve and enjoy.
