    1. Preheat oven to 400°F.
    2. Put the sweet potatoes on a large baking tin. Sprinkle with salt and pepper and add the rosemary and oil. Mix well and cook in the oven for 10 minutes, stirring occasionally.
    3. Add the onion, squash, mushrooms, garlic and bacon. Stir well and return to the oven for a further 20 minutes, stirring occasionally, until golden.
    4. Gently press vegetables into a 10 inches square ovenproof dish lined with baking paper and make six indents. Crack an egg into each indent.
    5. Sprinkle with salt, pepper and Parmesan.
    6. Bake for 10-12 minutes until the eggs are just set.
    7. Serve at once with a mixed salad.
