    Instructions
    1. Preheat the oven to 180°C (350°F).
    2. Use coconut oil to grease a 23cm (9 inch) pie dish.
    3. Heat the oil in a pan over a medium heat, and sauté the onions until they turn soft.
    4. Mix in the spinach and cook until excess water has evaporated.
    5. In a bowl, combine the eggs, cheese (if using) and season. Add the spinach mixture to the bowl and stir until thoroughly mixed.
    6. Pour the mixture into the pie dish and back in the preheated oven for approximately 30 minutes, or until the eggs have set.
    7. Allow to cool for a few minutes, and then serve.
