    Instructions
    1. Puree the tomatoes in a blender and set aside.
    2. In a large pan, over a medium heat, heat the oil and add the tomatoes and season to taste.
    3. Stir the mixture to enable excess liquid to evaporate.
    4. After about ten minutes, once the mixture becomes dry, beat the eggs and pour into the pan.
    5. Stir the mixture to ensure the egg cooks thoroughly.
    6. Serve.
